My folks live in a very rural area with no Internet access. They want to have a system that records locally so that they can play back anything that's gone awry while they weren't around, but are not interested in (nor can they use) any of the remote viewing systems. They were recommended this system (https://amcrest.com/4k-8ch-poe-nvr-nv4108e-4tb.html) since they already have some amcrest cameras that are PoE. However in the specs, it says that an Ethernet connection is required to a router.
If all they want is for the cameras to save to the local HD in the NVR and for that data to be available for a few days for review in case of an issue, will this system work? Can they just skip the Ethernet connection, run the cameras direct to the box, and plug in to a monitor via HDMI to do setup and video review? We're looking for simple plug in to the box, plug in a screen, select a storage quality for the image, old videos are deleted to make room for new video (rolling window) style system. If this system can't do that, is there one that can handle offline? They are likely to never (or very rarely) have Internet to install updates or anything as well.

Yes the system will work without a Internet connection. Just will need to have all the cameras connect via POE on the NVR. Internet connection is for access to Wifi cameras or having access VIA P2P from outside of the network zone incase there is an alert that needs to be reviewed remotely. However if that isn't needed then connect cameras to POE ports of the NVR and record to the NVR play back when local to Recorder..
