Your PC probably has some kind of Windows scaling problem that makes the camera image too big. If you could see the menu under the image, you shouldn't have any problem understanding how to disable, change text, and move things. You could try the instructions in the following link to see if it fixes...

Using Web UI, go to Setup/Video-Overlay tab. Drag text box to where you want it.

You could try Windows 10 Surveillance Pro with Boot Camp or Parallels on your Mac.
Or try remote IOS or Android Amcrest View Pro app for the cameras or NVR connected to your local network.
Or get a Windows PC.

You probably have an Amcrest Cloud account set up that will periodically update camera settings.
To stop it, there is a screen in the following video that shows how to delete your Cloud account:

I can export a IP4M-1026 H.265 encoded file with PC IE Web UI and play it with VLC.
