I just ordered a Qcam 2-Megapixel (1920 x 1080) 8Ch Network POE Video Security System (NVR Kit) - Four 2MP POE Weatherproof Bullet IP Cameras. This system comes with 60' cables. I know 2 of my runs will be closer to 80".
My questions is: Will I be better off just buying new longer cables or can I use short patch cables and a connector to make the required length?
I'd also like to run the cables from the cameras to a wall plate and then use short patch cables from the wall plate to the NVR for a cleaner look.
Will I have any trouble with signal loss doing it this way?
Total length will be less than 100" on any camera.

You should not have any signal loss patching things in properly and using the right cable (cat 5 or cat 6). Honestly it is the best way to do it. The length of run is nothing either. You won't have any issues.

If the total length of the cable is going to be 100 feet it should not cause any problem. For the POE connection the maximum distance is usually 200 feet.
