What are channels? Are these the number of cameras that can be used with the DVR?

Therefore a 4 channel system can only have up to 4 cameras?

Hello,
Yes, the channels here refer to one camera. The DVR has 4,8 or 16 ports on the back of it depending on the number of channel it supports.
